  • kosher or sea salt to taste
  • 1/4 cup canola oil
  • 2 tablespoons Dijon mustard (Grey Poupon Country Dijon suggested)
  • 6 cups green cabbage thinly sliced
  • 1/2 cup carrots grated
  • 1/2 red bell pepper diced
  • 1/2 cup sweet onion grated (Vidalia works well)
  • 1 teaspoon caraway or celery seeds
  • 1/2 teaspoon black pepper freshly ground

Instructions

  • Whisk together the apple cider vinegar, maple syrup, salt, canola oil, and Dijon mustard until well combined.
  • In a large bowl, combine the sliced cabbage, grated carrots, diced red bell pepper, grated sweet onion, caraway (or celery) seeds, and freshly ground black pepper. Pour the dressing over the vegetables and toss until everything is evenly coated.
