Summer SWEAT Week 2 Meal Plan: Energizing Recipes & Prep Tips

Week 2’s meal plan includes some standout recipes. The ones I’m most excited to try (or make again) are:

  • Sweet Potato Black Bean Breakfast Burrito
  • Copycat PF Chang’s Chicken Lettuce Wraps
  • Healthy Protein Buckeyes
  • Butternut Squash and Black Bean Enchilada Skillet

Keep in mind the meal plan is designed for a single female. Depending on your energy needs and health goals, you may want to increase portions or add an extra snack or two. I recommend a high-protein, low-carb option like a hard-boiled egg or almond butter mixed with protein powder. Most recipes are largely gluten-free and many include meat; if you follow a vegetarian diet, feel free to substitute with chickpeas, tofu, or another favorite plant protein.

These meal plans are meant to inspire healthier eating, not to be strict rules. If you have a date night or attend a party, make sensible choices and enjoy yourself — healthy living is all about balance.
