Modernizing classic recipes brings delightful results. Adding cream cheese to a box of Jiffy Corn Muffin Mix transforms a familiar side into a rich, creamy cornbread that’s moist, tender, and full of flavor.

How to improve a box of Jiffy Cornbread
Jiffy Corn Muffin Mix provides an easy, dependable base for cornbread. Swapping the egg and milk called for on the box with cream cheese and heavy whipping cream creates a richer texture, while melted butter adds depth and a golden crust. The result is a softer, less crumbly Southern-style cornbread with a luxurious mouthfeel.

How is this recipe different?
This version stands out because it uses cream cheese as a binder instead of eggs. Cream cheese helps the batter hold together while keeping the crumb tender and moist. Combined with butter and heavy whipping cream, the mix yields a cornbread that’s richer and creamier than the standard boxed version.

What is the difference between Northern cornbread and Southern cornbread?
Do Southerners put sugar in their cornbread?
Historically, Southern cornbread used naturally sweeter white cornmeal. Over time, yellow cornmeal became more common; it’s less sweet and finer, so many Southern recipes add sugar and flour to balance flavor and texture. Northern cornbread tends to be less sweet and often uses eggs as the binder. Both styles reflect regional ingredients and culinary traditions.

Ingredients
Instead of the box instructions (egg and whole milk), this recipe substitutes cream cheese for the egg and heavy whipping cream for the milk, and uses butter for added richness. These simple swaps elevate the texture and flavor without extra fuss.

How to doctor up boxed cornbread mix
Preheat the oven and use a hot baking pan or skillet to melt the butter; this helps the cornbread bake evenly and develop a nice crust. The added cream cheese, butter, and heavy cream lock in moisture. Test doneness with a toothpick — if it comes out clean, the cornbread is ready.
Full instructions are in the recipe card below.
- Melt the butter in an oven-safe 8″ skillet or pan.
- Combine the Jiffy mix, softened cream cheese, and heavy whipping cream (add sugar if desired) in a mixing bowl.
- Add the melted butter to the batter and stir until smooth.
- Pour the batter into the prepared pan and bake.
