Ingredients
- 1 (9 oz.) box Nabisco Famous Chocolate Wafers
- 1 container Breyers Vanilla Bean Light Ice Cream (½ fat) or your favorite reduced-fat vanilla ice cream (this recipe uses about 2½ cups total)
- Mini chocolate chips, Health English Toffee Bits, jimmies, chopped almonds or peanuts, optional

Soften the ice cream slightly if needed so it’s easy to scoop.

Place 2 tablespoons of softened ice cream on one wafer. Top with a second wafer and press gently so the ice cream spreads without cracking the wafers. Smooth the sides with a knife for a neat edge.

If you like, roll the sandwich edges in mini chocolate chips, chopped toffee, jimmies, or chopped nuts for extra flavor and texture. Transfer to a tray and place in the freezer.

Repeat until you’ve made as many sandwiches as you want, arranging them in a single layer in the freezer so they firm evenly.

Freeze the sandwiches for at least two hours to firm up. Once solid, wrap each one in plastic wrap or store in an airtight container in the freezer.
