We often use Mediterranean-inspired techniques—olive oil, lemon, garlic and fresh herbs—to highlight asparagus’s natural character. It also works well in unexpected dishes like soups, salads and pastas.

Whether you’re planning an Easter dinner or just want an easy, elegant side, asparagus can be the star of the table. Below are five straightforward methods that each take about 20 minutes or less from start to finish.

Five quick ways to cook asparagus

Sautéed asparagus

  1. Trim or snap off the woody ends and cut the spears into shorter pieces if desired. To keep them whole, use a large skillet so they fit comfortably.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add asparagus, crushed garlic, salt and pepper.
  3. Sauté for about 2 minutes, then add a splash of white wine and stir to deglaze the pan.
  4. When the wine evaporates, lower the heat to medium-low, cover and cook 5–7 minutes until tender but still bright and slightly crisp.

Roasted asparagus

  1. Preheat the oven to 400°F (200°C). Rinse asparagus and trim off the woody ends with a sharp knife.
  2. Place asparagus on a baking sheet and drizzle with olive oil, then season with salt, pepper and crushed garlic. Toss to coat evenly.
  3. Spread the spears in a single layer and roast for 10–15 minutes depending on thickness. Test tenderness by piercing with a fork near the base.

Steamed asparagus

  1. Rinse asparagus and remove the tougher, woodier ends.
  2. Add a few inches of water to a large skillet or saucepan, insert a steamer basket and arrange the asparagus inside. Cover with a lid.
  3. Bring to a boil and steam for 5–10 minutes depending on thickness; thinner spears need less time. The vegetable should be tender yet still vibrant green.
  4. Finish with fresh lemon and a light honey-mustard or vinaigrette for serving.

Air fryer asparagus

  1. Preheat the air fryer to 400°F (200°C) for a few minutes. Rinse asparagus, pat dry and trim the woody ends.
  2. Toss asparagus in a bowl with olive oil, salt, pepper and crushed garlic to coat evenly.
  3. Place the spears in the air fryer basket (a light overlap is fine) and air fry for about 8 minutes, shaking halfway through. For a golden finish, sprinkle grated Parmesan in the final minutes.

Asparagus pesto

  1. Trim and discard the woody ends. Slice the spears into discs, keeping the tips whole.
  2. Sauté chopped onion in extra virgin olive oil in a skillet until softened.
  3. Add the asparagus pieces (reserve some tips), garlic, salt and pepper and cook about 5 minutes until tender.
  4. Place half of the cooked asparagus in a food processor with fresh basil, grated Parmesan, lemon juice and a splash of water, then blend until smooth and creamy. Meanwhile, cook the pasta.
  5. Toss the pesto back into the skillet with the remaining asparagus, add drained pasta and a bit of reserved pasta water. Stir to create a silky sauce, adding more pasta water or Parmesan as needed.

Mediterranean methods to cook asparagus

  • Blanching: Boil asparagus in generously salted water for about one minute, then plunge into ice water for 20 seconds. Drain, pat dry and finish quickly in a hot skillet for a bright, tender result.
  • Grilling: When the grill pan or outdoor grill is hot, place marinated spears across the grates and cook 5–10 minutes, turning occasionally until charred and tender.

How to store asparagus

Leftovers can be stored in the refrigerator for up to 3 days in an airtight container. Enjoy cold, at room temperature, or reheat briefly in the microwave or air fryer. Freezing is not recommended for best texture and flavor.

  • 1 bunch (16 oz/1 lb) asparagus
  • 2 teaspoons extra virgin olive oil
  • ½ teaspoon salt
  • 2 twists black pepper
  • 2 cloves garliccrushed, or 1 teaspoon garlic powder
  • 4 wedges lemon(for serving)
  • 1 tablespoon parsleyor basil, chopped (for serving)

Instructions

  • Preheat the air fryer to 400°F (200°C) for 3 minutes. Rinse asparagus and shake off excess water. Pat dry and trim the woody ends with a sharp knife.
