A grilled tomato Italian grinder is exactly the sandwich you want this week. Thinly sliced Italian meats and fresh mozzarella meet homemade grilled tomatoes, all piled on a crusty loaf brushed with basil pesto. Pack one for a picnic or enjoy it at home—the combination is irresistible.

Call it a grinder, hero, sub, or whatever you prefer—if you enjoy a substantial, well-stacked sandwich, this Italian grinder will win you over. It’s handheld comfort food with bright Italian flavors and satisfying textures.
Sandwiches rank high on my list of favorites—right up there with burritos. They’re portable, endlessly adaptable, and pair beautifully with a crisp drink or a casual meal outdoors.

This version brings a touch of Italy to a classic grinder. Start with a crusty loaf—a baguette from your bakery works perfectly—and spread the cut sides with fragrant basil pesto.
Next comes the meat. I like a mix of salty prosciutto and robust salami because those flavors stand up to the pesto and balance the other ingredients.
The cheese should be fresh mozzarella. Its mild, milky texture complements the savory meats and the sweet, concentrated flavor of the tomatoes.

What really sets this sandwich apart is the grilled tomatoes.
Grilled or roasted tomatoes transform when heated: they collapse slightly, intensifying their flavor and developing a touch of sweetness and smokiness you don’t get from raw slices.

Layered together—meats, mozzarella, and the warm, concentrated tomatoes—this sandwich delivers contrasts in flavor and texture that make every bite a delight.
I like to serve it with a small bowl of warmed marinara for dipping. The contrast of a chilled sandwich dipped into hot tomato sauce is surprisingly satisfying: the grilled tomatoes bring freshness while the sauce adds warmth and depth.

The result is simple, bold, and delicious. If you make one today, you might find yourself making another before the week is out.

This Recipe’s Must Haves
- Shun Classic 9-Inch Bread Knife — makes slicing a crusty loaf easy and clean.
- Wood pellet or gas grill — for reliably charred, juicy grilled tomatoes that carry a hint of smokiness.
- Large cutting board — useful for slicing cheese, meats, and assembling the sandwich, especially if you’re preparing it outdoors.

Grilled Tomato Italian Grinder Sandwich
ingredients
- 3 large ripe tomatoes, sliced in half laterally
- 3 Tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 loaf crusty French baguette
- 6 oz thinly sliced prosciutto
- 6 oz sliced salami
- 5 oz mozzarella sliced
- 1/2 cup basil pesto
instructions
-
Heat the grill to high. Place a wire rack greased with olive oil on the grill while it warms.
-
Spoon out the pulp from the tomato halves and combine it in a bowl with the olive oil, salt, and pepper.
-
Gently mash the mixture with a fork to blend. Set aside.
-
Lightly season the tomato halves with a bit more salt and an extra drizzle of olive oil.
-
Place the tomatoes cut-side down on the wire rack and grill about 15 minutes. Flip them, spoon the pulp mixture over the cut sides, and grill another 15–20 minutes until they’re shriveled and reduced by roughly half in height.
-
Cut the loaf into two 9-inch pieces and slice each piece in half horizontally.
-
Spread the cut sides evenly with basil pesto.
-
Layer the bottom halves with prosciutto and salami, add mozzarella slices, then top with three grilled tomato halves per sandwich. Close with the top halves of the bread.
-
Serve right away or wrap in foil and refrigerate until serving. These sandwiches can be made a day ahead—choose a very crusty loaf so the bread stays firm and resists sogginess.
