I recently got hooked on pre-made chopped salad kits, and this is my homemade take on one of my favorites. I decided to add more of the things I love — avocado, grilled chicken, bacon — and finish it with a tangy orange honey mustard dressing. Simple upgrades make all the difference.

I love chopped salads because the vegetables are finely cut, so every bite is full of flavor and texture — and they fill you up without feeling heavy. This version combines chopped romaine, cabbage, kale and carrots, then adds protein from grilled chicken and crumbled bacon, plus healthy fat from avocado and a crunchy finish from sunflower seeds.

Coated in a tangy orange honey mustard — I’m all about that sauce.

The dressing comes together quickly with ingredients you may already have: Florida orange juice, spicy brown mustard, mayo and maple syrup (or honey). I add a few drops of sriracha for heat, but that’s optional if you prefer it milder.

As a Florida native now raising a family in Orlando, I like using Florida orange juice in recipes. A splash of fresh OJ brightens the dressing with natural citrus flavor and adds vitamin C and potassium without added sugar.

This Farmhouse Chicken Chopped Salad mixes shredded romaine, cabbage, kale and carrots with grilled chicken, crispy bacon, sunflower seeds and avocado, all dressed in a tangy orange honey mustard. It’s colorful, filling and full of contrasting textures.

Ingredients

  • 2 cups shredded romaine lettuce
  • 2 cups chopped cabbage
  • 1 cup shredded kale
  • 1 cup shredded carrots
  • 8 ounces grilled chicken breast, chopped
  • 3 strips cooked center cut bacon, crumbled
  • 2 tablespoons sunflower seeds
  • ½ avocado, diced
  • For dressing
  • ⅓ cup Florida Orange Juice
  • 2 tablespoons spicy brown mustard
  • 1 tablespoon 100% pure maple syrup (or honey)
  • 3 tablespoons mayo
  • 56 drops sriracha hot sauce (optional)
  • Pinch of salt and freshly ground pepper to taste

Instructions

  1. Preheat oven to 400°F and line a rimmed baking sheet with parchment. Arrange bacon on the sheet and bake about 20 minutes until crisp. Transfer cooked bacon to a paper-towel-lined plate to cool, then crumble.
  2. Make the dressing by combining Florida orange juice, mustard, maple syrup (or honey), mayo, sriracha (if using), and a pinch of salt and pepper. Shake in a jar or whisk in a bowl until smooth.
  3. In a large bowl, combine shredded romaine, cabbage, kale and carrots. Add chopped grilled chicken and crumbled bacon. Toss with the dressing, then top with diced avocado and sunflower seeds. Serve immediately.
