- 2 Tablespoons fresh lemon juice (30g)
- 2 Tablespoons water (30g)
- 2 Tablespoons cornstarch (20g)
- zest of half a lemon
- 1 teaspoon vanilla extract
For the Shortbread Crust & Crumbs
- 2 cups all-purpose flour (260g)
- ½ cup granulated sugar (100g)
- ¼ cup brown sugar (50g)
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- ¾ cup unsalted butter (170g), melted
- 1 teaspoon vanilla extract

Cherry Filling: In a medium saucepan, combine the cherries, sugar, lemon juice, water, cornstarch, and lemon zest.
