As the weather cools, I love experimenting with fall baking. These Banana Bread Rolls offer the comforting banana flavor of banana bread but in a light, airy roll. They’re an excellent way to use up overripe bananas and make a batch that’s tender and subtly sweet.

The Ingredients
These Banana Bread Rolls use just six simple ingredients.

- Bananas – Overripe bananas are best because they mash easily and are sweeter. If needed, puree in a blender without adding water.
- Eggs – Add richness and structure.
- Oil – Use a neutral oil such as vegetable or light olive oil.
- Flour – All-purpose flour works well; you can also use bread flour for a chewier texture.
- Yeast – Instant yeast helps the rolls rise and stay fluffy.
- Salt – Enhances flavor; omit only for dietary reasons.
See the recipe card below for exact measurements and full ingredient details.

How To Make Banana Bread Rolls
- Mash or puree the bananas: Use a fork or blender to get a smooth mashed banana.
- Combine ingredients: In a large bowl (or stand mixer), add the mashed bananas, eggs, oil, yeast, salt, and most of the flour. Mix until a shaggy dough forms.
- Knead until smooth: Knead by hand or with the mixer, adding more flour a little at a time until the dough is soft but not overly sticky.
- Portion the dough: Divide into 12 equal pieces, shape each into a ball, and place them in a 9×13-inch baking dish greased with oil or butter.
- Let rise: Allow the rolls to rise in a warm place for about one hour, until noticeably puffy.
- Bake: Preheat the oven to 350°F (180°C) and bake for about 22–25 minutes, until golden and fully cooked. If the tops brown too fast, tent loosely with foil.

Serving tip: Serve the rolls warm with butter or cream cheese for a delicious finish.
Variations
Customize these rolls by adding:
- Chocolate chips – Fold into the dough for chocolate banana rolls.
- Raisins or other dried fruit – Stir in during kneading for added chew and sweetness.
- Chopped nuts – Walnuts or pecans add texture and a toasty flavor.
- Spices – Cinnamon, nutmeg, or a pinch of cardamom give warm, spiced notes.

- 2 teaspoons salt
Instructions
-

-
Mash the bananas until smooth.

In a large bowl or the bowl of a stand mixer, combine mashed bananas with the eggs, oil, yeast, salt, and start with 4 cups of flour. Mix until combined, then knead, adding more flour as needed until the dough is soft but not too sticky. (About 4½ cups may be needed depending on banana moisture.)

Divide the dough into 12 equal pieces, roll each into a ball, and place in the prepared baking dish.
-
Let rise in a warm place for about 1 hour until noticeably puffy.

Preheat the oven to 350°F (180°C) while the rolls are rising. Bake for about 25 minutes until golden and cooked through. If they brown too quickly, loosely tent with foil after 15 minutes.
-
Serve warm, slathered with butter or cream cheese.
