Ingredients

  • 2 cups fresh or frozen blueberries
  • 3 Tablespoons water
  • 2 Tablespoons Stevia blend to equal the sweetness of ¼ cup refined sugar
  • 1 Tablespoon lemon juice
  • ¼ teaspoon cinnamon

Optional thickener

  • 1 teaspoon cornstarch
  • 2 teaspoons water

Instructions

  • Place 1 cup of blueberries, the water, sweetener and lemon juice in a small pot and stir to combine.
  • Cook over medium heat for about 10 minutes, stirring occasionally, until the berries begin to break down.
  • Add the remaining blueberries and the cinnamon, then continue cooking for about 5 more minutes, until the compote reaches your desired consistency.
  • If you prefer a thicker sauce, prepare a cornstarch slurry (see next step) and stir it into the compote during the last few minutes of cooking.
  • To make the slurry, combine the cornstarch and 2 teaspoons water in a small bowl and stir until smooth and lump-free before adding to the blueberry mixture.

Notes

Serve warm or cool. Store in an airtight container in the refrigerator for up to one week.
