We have a bit of a s’mores obsession at my house. I’ve shared brownies, bars, and frozen cups inspired by that classic combination of chocolate, marshmallow, and graham. These Golden Graham s’mores bars are a quick no-bake version that delivers the same satisfaction in under 15 minutes.

Because these bars don’t require an oven, they’re perfect for potlucks, picnics, or anytime you want an easy, portable dessert. They’re simple to slice and transport, and they disappear fast—guaranteed to be a crowd-pleaser.

Most recipes use only milk chocolate, but I like to combine milk and semi-sweet chocolate chips for a richer chocolate flavor and extra gooey texture. If you love cereal-based no-bake treats, these are just as easy as classic rice crispy treats—and in my opinion, even better.

Ingredients Needed for Ooey Gooey S’mores Bars

  • 10.5 ounce bag mini marshmallows (measure and reserve 1 cup)
  • ¾ cup semi-sweet chocolate chips
  • ¾ cup milk chocolate chips
  • 5 tablespoons butter (or margarine)
  • ¼ cup light corn syrup (or substitute; see notes)
  • 1 teaspoon vanilla extract
  • 8 cups Golden Grahams cereal

How to Make No-Bake Golden Graham S’mores Bars

  1. Prep: Spray a 9×13″ pan with nonstick spray and set aside. Lightly grease a large mixing bowl. Measure and reserve 1 cup of the mini marshmallows.
  2. Melt: In a large microwave-safe bowl combine the remaining marshmallows, both chocolate chips, butter, and corn syrup. Microwave in 30–60 second intervals, stirring frequently, until completely melted and smooth. Stir in vanilla.
  3. Coat the cereal: Put the Golden Grahams in the greased mixing bowl. Quickly pour the melted chocolate-marshmallow mixture over the cereal along with the reserved 1 cup of mini marshmallows. Stir gently until the cereal is evenly coated.
  4. Press into pan: Transfer the mixture to the prepared pan and press down evenly. Wet hands help prevent sticking; a spatula can also be used.
  5. Set: You can serve the bars warm after about 5 minutes, but for cleaner slices let them rest at room temperature for at least 30 minutes.

Variations for No-Bake S’mores Bars

  1. Substitute corn syrup with honey, or use ¼ cup sugar plus 1 tablespoon water if you prefer.
  2. Use only semi-sweet chocolate for a darker flavor, or only milk chocolate for a sweeter bar.
  3. Add mix-ins like mini chocolate chips or M&M’s—fold them in with the reserved marshmallows.

  • ¼ cup light corn syrup
  • 1 tsp vanilla extract

Instructions

Notes

Alternatively, melt the marshmallows, chocolate chips, butter, and corn syrup in a medium saucepan over low heat, stirring often, and then proceed with the recipe.
