After a lovely weekend hosting guests, it’s time to return to our regular routine. There will likely be a tantrum or two to keep things interesting, but a comforting meal always helps smooth things over.
Here’s what we’ll be having this week:

Meatless Monday: Roasted Cumin-Lime Eggplant Quesadillas. These are packed with flavor. I adore eggplant and could easily eat the entire pan of this quesadilla filling — it’s that good.
We reserve Monday for a meatless meal because it’s more budget-friendly and better for the environment. My meat-and-potatoes husband goes along with it, especially when there’s a tasty dessert on the side. I like to keep everyone happy.
Tuesday: Thai Chicken and Coconut Soup. I was thrilled when Stephanie’s cookbook arrived — I’m a big fan. I can’t wait to try this soup and explore the interplay of Thai flavors and creamy coconut. Expect a review next week.

Wednesday: Chipotle Corn Turkey Burgers. These burgers are back on the menu. They’re quick to prepare and work beautifully on a grill pan indoors or on an outdoor grill.
Thursday: Honey Lime Chicken Soft Tacos. Another recipe from Stephanie’s new book. I love prepping dinner in the morning so it’s ready with minimal fuss in the evening — perfect while everyone is eating breakfast.

Friday: Pizza. Friday isn’t complete without pizza made with the Perfect Pizza Crust — a reliable favorite for the whole family.
