Quick Dinner Fixins’ Cheeseburger Quesadillas

Ingredients:

  • 1/4 cup mayonnaise
  • 1/4 cup ketchup
  • 1–2 teaspoons sweet relish (to taste)
  • 1/2 lb ground beef
  • 1–2 teaspoons hamburger seasoning (or seasoning blend of choice)
  • Salt and pepper, to taste
  • Sliced American cheese (or cheese of choice)
  • 3/4 cup shredded lettuce
  • 1/2 onion, thinly sliced
  • Whole wheat flour tortillas

Preparation:

1. In a small container, combine the mayonnaise, ketchup, and sweet relish. Adjust the relish to your preferred sweetness and set the sauce aside.
2. Preheat a large skillet over medium-high heat. Add the ground beef and break it into small pieces as it cooks. Season with salt, pepper, and your chosen burger seasoning (the author likes McCormick Hamburger seasoning and a splash of Worcestershire sauce).
3. When the beef is nearly cooked, add the sliced onions, cover the skillet, reduce the heat to medium, and cook another 2–5 minutes until the onions are softened and the beef is fully done.
4. Wipe the skillet clean or preheat a quesadilla press or panini press. Place one tortilla on the heated surface.
5. Layer shredded lettuce, a slice or two of cheese, and a portion of the cooked beef and onions on the tortilla. Spread the mayonnaise-ketchup-relish mixture on a second tortilla and place it sauce-side down on top of the fillings.
6. Close the press (or use a spatula to press if cooking in a skillet) and cook until the cheese is melted and the tortillas are golden and crisp.
7. Remove, cut into wedges, and serve immediately.
Note: The original version of this recipe can also be made using leftover cooked burger patties for an even quicker assembly.
