Ingredients

  • 2 pounds yellow-fleshed potatoes, peeled and cubed
  • Kosher salt
  • 2/3 cup chicken broth, plus more to taste
  • Extra-virgin olive oil
  • 2 pounds 80/20 or lean ground beef
  • 2 medium carrots, peeled and diced
  • 1 celery stalk, diced
  • 1 medium yellow onion, diced
  • 8 ounces cremini mushrooms, roughly chopped or quartered
  • 4 cloves garlic, finely chopped
  • 1 teaspoon arrowroot starch
  • 2 tablespoons tomato paste
  • 1 tablespoon onion powder
  • 17 ounces beef bone broth (or substitute beef broth)
  • 1 cup frozen peas
  • Freshly cracked black pepper
  • 1 tablespoon finely chopped fresh parsley, for garnish

Instructions

  1. Add the potatoes to a medium saucepan, cover with water, add 1 teaspoon salt, partially cover, and bring to a boil. Cook until fork-tender, then drain. Add the chicken broth, 2 tablespoons olive oil, and ½ teaspoon salt. Mash until smooth, adding more broth or oil if needed. Taste and adjust seasoning, then cover and keep warm.
